
We’ve had a lot of rain here in the mountains lately, but the humidity continues to linger despite the low temperatures we’ve had. Fortunately for me my mint plant has been loving it. It is the most refreshing herbal addition to almost any smoothie I have whipped up, and it’s cooling qualities are just what I need after working in the garden or going for a bike ride in the neighborhood.
This smoothie is also an excellent way to throw another cup of spinach into your daily diet. I have been on a banana smoothie rampage, which is also a fantastic way to add in your greens with a fruity taste, but substituted the strawberries when I had run out of them. The spinach and mint compliment each other well.
- 4 or 5 frozen strawberries
- sprig of mint leaves
- handful of spinach
- 2 T. hemp seeds
- pinch of honey, agave, or stevia (optional)
- 1/2 c. Banana & Strawberry Jamba Juice, or coconut water works just fine
- 3 T. Greek yogurt
Blend together, and enjoy!
